Potato Cheese Soup

Yield:

Ingredients:

• 2 cups potatoes (about 2 potatoes), peeled and cubes
• 3 TBSP butter
• 1 small onion, chopped
• 3 TBSP flour
• 3 cups milk
• 1 cup cheddar cheese, shredded
• 4 slices bacon, cooked and crumbled or 4 TBSP Bacon Bits
• salt and pepper

Directions:

1. Cook potatoes in 2 cups of water in medium pot.
2. While the potatoes are cooking:
• melt butter in sauce pan. Add onions and cook until tender.
• Add flour and cook 3-4 minutes.
3. Add onion mixture to cooked potatoes and whisk until flour/onion mixture is blended.
4. Add milk, cheese and bacon, salt and pepper.
5. Simmer 30 minutes until warm, stirring frequently.
