Potato Cheese Soup
Yield:
Ingredients:
- 2 cups potatoes (about 2 potatoes), peeled and cubes
- 3 TBSP butter
- 1 small onion, chopped
- 3 TBSP flour
- 3 cups milk
- 1 cup cheddar cheese, shredded
- 4 slices bacon, cooked and crumbled or 4 TBSP Bacon Bits
- salt and pepper
Directions:
- Cook potatoes in 2 cups of water in medium pot.
- While the potatoes are cooking:
- melt butter in sauce pan. Add onions and cook until tender.
- Add flour and cook 3-4 minutes.
- Add onion mixture to cooked potatoes and whisk until flour/onion mixture is blended.
- Add milk, cheese and bacon, salt and pepper.
- Simmer 30 minutes until warm, stirring frequently.
